Preparation Steps
- Preheat the air fryer to 360°F.
- Shred the zucchini using a box grater and squeeze out excess water using a kitchen towel.
- In a large bowl, combine shredded zucchini, corn kernels, parmesan, onion, garlic, parsley, salt, pepper, basil, oregano, paprika, and eggs. Mix well.
- Add flour and baking powder to the mixture and stir until well combined. Adjust flour if the mixture is too wet.
- Form the mixture into 10-12 patties.
- Spray the air fryer basket with cooking oil. Place patties in the basket in a single layer, spraying each with cooking oil.
- Cook for 6 minutes, then flip the fritters, spray with cooking oil, and cook for an additional 6-8 minutes or until browned.
- Remove from the air fryer and serve warm with your favorite dip.
