Preparation Steps
  1. Heat a large skillet over medium heat and add a tablespoon of oil.
  2. Add diced chicken to the skillet and cook until browned, about 5 minutes.
  3. Stir in yellow curry paste and cook for another minute until fragrant.
  4. Pour in coconut milk and add vegetables. Simmer for 10 minutes until vegetables are tender and chicken is cooked through.
  5. Serve hot over jasmine rice, garnished with fresh herbs if desired.

Notes

Adjust spice levels according to taste. Can be made vegetarian by substituting chicken with tofu or more vegetables.
