  • 1.5 pounds beef top sirloin fat trimmed and cut into 1-inch cubes
  • 5 cloves garlic crushed
  • 1 tablespoon agave
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon thick soy sauce
  • 0.5 cup rice vinegar
  • 1.5 tablespoons sugar
  • 1.5 teaspoons kosher salt
  • 1 lime lime juice
  • 0.5 teaspoon cracked black pepper
  • 0.25 cup red onion thinly sliced
  • 4 cups watercress leaves or mixed greens
  • 2 tomatoes tomatoes thinly sliced
  • 1 tablespoon canola oil divided

Method
 

Preparation Steps
  1. Marinate the beef with garlic, oyster sauce, fish sauce, sesame oil, soy sauce, and sugar for at least 1 hour or overnight.
  2. Prepare the vinaigrette by combining rice vinegar, salt, and sugar until balanced.
  3. Thinly slice the red onion and pickle with 1/4 cup of vinaigrette for about 10 minutes in the fridge.
  4. Arrange greens and sliced tomatoes on a serving platter.
  5. Make lime dipping sauce by squeezing lime juice over salt and pepper in a small ramekin.
  6. Heat a wok or large skillet over high heat. Add 1/2 tbsp oil. When smoking, add half of the beef cubes and sear for 2 minutes, shaking the pan to cook evenly. Repeat with remaining beef.
  7. Transfer seared beef to the bed of greens and tomatoes. Drizzle vinaigrette over and top with pickled onions. Serve with lime dipping sauce.

Notes

This dish is best enjoyed immediately while the beef is tender and hot.
