  • 1 lb breakfast sausage
  • 32 oz frozen tater tots divided
  • 6 large eggs
  • 0.5 cup milk
  • 0.5 cup half-and-half
  • 0.5 tsp cajun seasoning
  • 1 cup grated cheddar cheese
  • 1 cup grated pepper jack cheese
  • Parsley for topping optional

Method
 

Preparation Steps
  1. Cook the sausage in a skillet until browned, then remove from heat.
  2. Spray the slow cooker with nonstick spray or use a liner.
  3. Layer half of the tater tots in the bottom of the slow cooker.
  4. Add cooked sausage over the tater tots.
  5. Whisk eggs, milk, half-and-half, cajun seasoning, and half of each cheese in a bowl.
  6. Pour egg mixture over sausage and tater tots. Top with remaining tater tots.
  7. Cover and cook on low for 4 hours or high for 2-3 hours.
  8. Half an hour before done, check for any liquid and cook longer if needed. Add remaining cheese and cook 30 more minutes.
  9. Garnish with chopped parsley and serve hot.
