  • 3 small yellow onions sliced
  • 2 tablespoons olive oil
  • 0.5 cup crumbled feta cheese or to taste
  • 1 tablespoon dried oregano or fresh herbs of choice

Method
 

Preparation Steps
  1. Preheat oven to 450°F.
  2. Butter a large baking dish and set aside.
  3. In a bowl, toss the cubed sweet potatoes, sliced onions, olive oil, salt, pepper, and oregano until well coated.
  4. Spread the mixture evenly on the prepared baking dish.
  5. Bake for 20 to 25 minutes, stirring halfway through, until potatoes are fork-tender.
  6. Remove from oven and sprinkle with crumbled feta cheese before serving.
