  • 0.75 pound ground beef
  • 1.5 tablespoons cumin
  • 1 teaspoon salt
  • 1 can crushed tomatoes (28 ounces)
  • 1 can black beans (15.25 ounces, rinsed and drained)
  • 1 can sweet corn (15.25 ounces, drained)
  • 3 cups cooked jasmine rice
  • 8 pieces red bell peppers fresh
  • 1 cup reduced fat Colby Jack cheese
  • 2 green onions sliced

Method
 

Preparation Steps
  1. Wash red peppers and slice the tops off each pepper. Remove the seeds. Stand each pepper up in a large baking dish.
  2. In a large skillet, cook ground beef until browned; drain excess fat. Add cumin, salt, crushed tomatoes, black beans, and corn. Simmer for 15 minutes.
  3. Cook jasmine rice according to the package instructions.
  4. Fill each red bell pepper with the meat and rice mixture. Cover with foil and bake at 350°F for 40-45 minutes. Remove foil, sprinkle with cheese, and bake an additional 5 minutes until cheese melts.
  5. Sprinkle sliced green onions over the stuffed peppers before serving. Enjoy!

Notes

For added flavor, top with fresh cilantro or a squeeze of lime.
