Preparation Steps
- Preheat the oven to 400°F.
- Lightly spray a medium nonstick skillet with olive oil and heat over medium. Add onion, garlic, and cilantro; sauté for about 2 minutes.
- Add ground turkey, salt, garlic powder, and cumin. Cook for 4 to 5 minutes until fully cooked.
- Stir in 1/4 cup tomato sauce and 1/2 cup chicken broth. Simmer on low for about 5 minutes.
- Combine cooked rice with the meat mixture.
- Cut the bell peppers in half lengthwise and remove seeds. Stuff each half with approximately 2/3 cup of the filling.
- Place stuffed peppers in a baking dish, top each with 1 tablespoon shredded cheese. Pour remaining chicken broth in the dish.
- Cover tightly with aluminum foil and bake for 45 minutes until peppers are tender.
- Remove foil and serve immediately, optionally garnished with additional cheese.
