  • 1.5 tablespoons cumin
  • 1 teaspoon kosher salt
  • 1 can crushed tomatoes (28 ounces)
  • 1 can black beans, rinsed and drained (15.25 ounces)
  • 1 can sweet corn, drained (15.25 ounces)
  • 3 cups cooked jasmine rice
  • 6 fleshly red peppers red bell peppers
  • 1 cup reduced fat Colby Jack cheese
  • 2 green onions sliced green onions

Method
 

Preparation Steps
  1. Wash the red peppers and slice the tops off each. Remove the seeds and membranes. Place peppers upright in a baking dish.
  2. In a large skillet, cook the ground beef until browned. Drain excess fat. Stir in cumin and salt. Add crushed tomatoes, black beans, and corn. Simmer for 15 minutes.
  3. Combine cooked rice with the meat mixture. Spoon the filling into each prepared pepper. Top with cheese.
  4. Cover the dish with foil and bake at 350°F for 40 minutes. Remove foil, sprinkle with sliced green onions, and bake for an additional 5 minutes until cheese melts.
  5. Let cool slightly before serving. Enjoy your hearty stuffed peppers!
