Preparation Steps
- Preheat oven to 375 degrees Fahrenheit.
- Rub a 13x9 inch baking dish with butter.
- Layer half of the sliced potatoes in the dish, overlapping slightly.
- Spread the fresh spinach evenly over the potatoes.
- Sprinkle the crumbled feta cheese on top of the spinach.
- Add the remaining potato slices on top. In a mixing bowl, whisk together heavy cream, eggs, salt, and pepper.
- Pour the cream mixture over the layered ingredients.
- Bake uncovered for 80 minutes, or until potatoes are tender when pierced with a fork.
- Remove from oven and let rest for 15 minutes before serving.
Notes
For a richer flavor, sauté the spinach with garlic before layering.
