  • 2 stalks celery chopped
  • 1 tbsp red onion chopped
  • 2 tbsp light mayonnaise check label for keto
  • 1 tbsp fat-free Greek yogurt full fat for keto
  • seasoning salt or adobo seasoning, to taste
  • salt and black pepper
  • 30 thin slices cucumber about 1 large cucumber
  • chopped chives for garnish

Method
 

Preparation Steps
  1. Combine cooked shrimp, chopped celery, red onion, mayonnaise, Greek yogurt, and seasonings in a bowl. Mix well to combine.
  2. Arrange cucumber slices on a serving platter. Season with a little salt.
  3. Top each cucumber slice with a generous spoonful of shrimp salad.
  4. Garnish with chopped chives for color and flavor.
