  • 1.5 lbs sweet potatoes
  • 3 cloves garlic
  • 0.5 cup 1% milk
  • 0.25 cup chicken broth
  • 2 tbsp sour cream
  • 1 tsp kosher salt
  • 1 lb 93% lean ground turkey
  • 1 tsp olive oil
  • 1 medium onion diced
  • 1 stalk celery chopped
  • 1 diced parsnip
  • 2 cloves garlic diced
  • 8 oz mushrooms diced
  • 10 oz frozen mixed vegetables
  • 2 tbsp flour
  • 1 cup chicken broth
  • 2 tsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp fresh rosemary or fresh thyme
  • paprika for topping

Method
 

Preparation Steps
  1. Preheat oven to 400°F.
  2. Boil sweet potatoes and garlic in salted water until cooked and soft. Drain and mash with chicken broth, milk, sour cream, salt, and pepper.
  3. In a large skillet, brown the ground turkey about 5 minutes; season with salt and pepper. Set aside.
  4. Add olive oil to the pan, then sauté diced onion for 1 minute. Add chopped celery, parsnip, salt, and pepper; cook about 12 minutes until softened.
  5. Add diced garlic and mushrooms; sauté another 3-4 minutes. Mix in flour and pepper.
  6. Add frozen vegetables, chicken broth, tomato paste, Worcestershire sauce, rosemary, and cooked turkey. Simmer covered on low for 5-10 minutes until thickened. Adjust seasonings as needed.
  7. Spread the meat mixture in a 9x12 baking dish.
  8. Top with mashed sweet potatoes. Ridges can be made with a fork; sprinkle with paprika.
  9. Bake for 30-35 minutes until golden and heated through.
  10. Remove from oven and let cool 10 minutes before serving.
