  • 1.5 lb large potatoes
  • 1 medium onion peeled and quartered
  • 2 red bell peppers bell peppers seeds removed and cut into 1-inch pieces
  • 1 lb Italian chicken sausage
Seasonings & Oils
  • 2 tsp extra virgin olive oil
  • 1 tsp chopped rosemary
  • 0.5 tsp garlic powder
  • kosher salt to taste
  • fresh cracked pepper to taste
  • olive oil spray for coating

Method
 

Preparation Steps
  1. Preheat the oven to 375°F. Line a baking sheet with parchment paper or spray with olive oil.
  2. Cut the potatoes into small 1-inch x 0.5-inch pieces. In a large bowl, combine potatoes, onion, peppers, olive oil, salt, pepper, rosemary and garlic powder. Toss well to coat evenly.
  3. Spread the mixture onto the prepared baking sheet. Roast for 15 minutes, tossing halfway through.
  4. Meanwhile, slice the sausage into 1/2-inch pieces. After the initial roasting, add sausage to the baking sheet and roast for an additional 25 minutes, tossing once or twice until potatoes are golden and sausage is cooked through.
  5. Remove from oven and serve hot, garnished with additional rosemary if desired.

Notes

You can add other vegetables like zucchini or cherry tomatoes for variety.
