  • 1 teaspoon lemon zest
  • 0.25 cup fresh lemon juice
  • 1 tablespoon dijon mustard
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons honey or maple syrup

Method
 

Preparation Steps
  1. Combine cooked quinoa, baby spinach, sliced strawberries, goat cheese, and pistachios in a large bowl.
  2. In a small bowl, whisk together lemon zest, lemon juice, dijon mustard, olive oil, honey, salt, and pepper to make the dressing.
