  • 1.5 teaspoons cinnamon divided into thirds

Method
 

Preparation Steps
  1. Preheat oven to 400°F. Spray three 5x3x2-inch mini loaf pans with cooking spray and set aside.
  2. In a large bowl, whisk together flour, baking powder, pumpkin pie spice, and salt.
  3. In another bowl, whisk sugars, pumpkin, oil, milk, molasses, and vanilla until combined.
  4. Pour wet mixture into dry ingredients and stir until just combined. Do not overmix.
  5. Distribute batter evenly into the prepared pans, filling each about two-thirds full.
  6. Sprinkle one tablespoon of sugar over each pan, then divide cinnamon evenly and sprinkle over the top.
  7. Bake for 40 minutes or until a toothpick inserted in the center comes out clean. Cover with foil if tops brown too quickly.
  8. Allow bread to cool in pans for 15 minutes, then transfer to wire racks to cool completely.
