- Preheat oven to 350F. Spray a 9 x 5 inch loaf pan with baking spray.
- In a medium bowl, combine flour, sugar, baking soda, pumpkin spice, nutmeg, cinnamon, and salt. Set aside.
- In a large bowl, mix oil, egg whites, pumpkin puree, and vanilla until well combined.
- Gradually add the dry ingredients into the wet mixture, blending at low speed until just combined.
- Pour batter into the prepared loaf pan, sprinkle with pepitas, and bake for 50-65 minutes until a toothpick inserted in the center comes out clean.
- Allow bread to cool for at least 20 minutes before slicing.
