  • 1 cup light brown sugar packed
  • 0.25 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 2.25 cups all-purpose flour
  • 0.6667 cup cake flour
  • 1 teaspoon kosher salt
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 cup semi-sweet chocolate chips
  • 1 cup peanut butter chips

Method
 

Preparation Steps
  1. Preheat your oven to 400°F. Line two baking sheets with parchment paper.
  2. Using a stand mixer with paddle attachment, combine cold butter, brown sugar, and granulated sugar. Beat on medium until creamy.
  3. Add egg and egg yolk; mix until well combined.
  4. Add vanilla extract and mix, scraping down sides as needed.
  5. Whisk together flour, cake flour, salt, baking powder, and baking soda in a medium bowl.
  6. Gradually add dry ingredients to wet mixture on low speed until just combined.
  7. Stir in chocolate chips and peanut butter chips until evenly distributed.
  8. Shape dough into 8 large balls (about 6 ounces each).
  9. Place 4 dough balls on prepared baking sheets, spacing evenly.
  10. Bake for 12 minutes or until edges are golden.
  11. Cool on sheets for 10 minutes, then transfer to wire racks.
