Preparation Steps
- Preheat oven to 425°F. Prepare a baking sheet on the lowest rack to catch drips.
- Combine peaches with lemon juice and remaining filling ingredients; stir and pour into baking dish.
- Bake peach mixture for 10 minutes. In the meantime, combine dry topping ingredients and cut in grated butter. Stir in boiling water until lumps remain.
- Drop topping dollops over peaches and sprinkle cinnamon sugar. Bake until crust is golden, about 28 minutes. Serve warm.
- For freezing, prepare and freeze peach filling in a bag, defrost before baking.
