  • 1.75 cups graham cracker crumbs
  • 6 tbsp salted butter, melted
  • 2 tbsp sugar
  • 40 oz cream cheese room temperature
  • 1.75 cups sugar
  • 3 tbsp all purpose flour
  • 1 tsp lemon zest
  • 4 tsp vanilla extract
  • 0.5 cup heavy cream
  • 5 large eggs room temperature
  • 2 large egg yolks room temperature

Method
 

Preparation Steps
  1. Preheat oven to 325°F. Line a 9-inch springform pan with parchment paper and grease the sides.
  2. Combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of the prepared pan.
  3. Bake the crust for 8-10 minutes and set aside to cool.
  4. Reduce oven temperature to 300°F. Beat cream cheese, sugar, and flour until smooth. Mix in lemon zest and vanilla.
  5. Add heavy cream, then eggs and yolks one at a time, mixing slowly.
  6. Pour batter into crust. Place in a water bath and bake for about 2 hours until edges are set.
  7. Turn off oven, crack door open, and cool gradually for 30 minutes.
  8. Refrigerate until fully set, at least 4 hours or overnight.
