  • 0.5 cup chopped onion
  • 2 tablespoons unbleached all-purpose flour
  • 2 cups vegetable broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon tomato paste
  • 5 oz sliced white mushrooms
  • 8 oz sliced cremini mushrooms
  • 3.5 oz shiitake mushrooms
  • 0.25 teaspoon thyme
  • 2 tablespoons white wine or sherry
  • 0.25 cup reduced-fat sour cream
  • 8 oz uncooked noodles
  • 1 tablespoon minced fresh flat-leaf parsley

Preparation Steps
  1. Cook noodles in salted water according to package instructions, undercooking slightly to finish with the sauce.
  2. Heat a large nonstick skillet over medium-high heat.
  3. Melt butter over medium heat, add onions, cook for 2-3 minutes. Stir in flour for 30 seconds.
  4. Gradually add broth, Worcestershire sauce, and tomato paste, stirring constantly.
  5. Add mushrooms, thyme, salt, and pepper; cook for 4-5 minutes until thickened and bubbling.
  6. Pour in wine or sherry; boil, then reduce heat and simmer for 4 minutes. Remove from heat.
  7. Stir in sour cream, add cooked noodles, toss to combine, and garnish with parsley.
