Ingredients

  • 0.25 cup extra virgin olive oil
  • 3 cloves garlic minced
  • 2 cans cannellini beans 15-ounce each, well rinsed and drained
  • 2 cups water
  • 1 teaspoon salt
  • 1 tablespoon lemon juice
  • 2 teaspoons red wine vinegar
  • 1 small shallot minced
  • 1 small red bell pepper diced
  • 1 small yellow bell pepper diced
  • 2 cups cherry tomatoes quartered
  • 3 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh parsley
  • 0.25 teaspoon black pepper fresh ground

Method
 

Preparation Steps
  1. Heat 1 tablespoon of olive oil in a saucepan over medium heat.
  2. Add minced garlic and cook for 30 seconds, stirring until golden brown.
  3. Add beans to the saucepan; stir, and add 2 cups water. Season with salt and simmer for 10 minutes.
  4. Remove from heat; cover and let stand for 15 minutes.
  5. Meanwhile, whisk together remaining olive oil, lemon juice, vinegar, and minced shallot in a large bowl. Let stand for 15 minutes.
  6. Drain beans and rinse under cold water; add to the dressing.
  7. Add diced red and yellow bell peppers, cherry tomatoes, chopped basil, parsley, and black pepper. Toss gently to combine.
  8. Taste and adjust seasonings as needed. Let sit for 20 minutes before serving.
  9. Serve cold garnished with additional herbs if desired.
