  • 1.5 cups dry lentils
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 carrots large carrots diced
  • 6 cups vegetable broth
  • 0.5 teaspoon cumin
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon salt

Method
 

Preparation Steps
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic and cook until translucent, about 3-4 minutes.
  2. Add diced carrots and cook for another 5 minutes, stirring occasionally.
  3. Rinse lentils thoroughly and add them to the pot along with vegetable broth, cumin, salt, and black pepper.
  4. Bring the mixture to a boil, then reduce heat and simmer uncovered for 35 minutes, or until lentils are tender.
  5. Use an immersion blender to puree some of the soup if you prefer a creamier texture, or leave it chunky.
  6. Adjust seasoning with salt and pepper to taste, then serve hot garnished with fresh herbs if desired.

Notes

You can add chopped tomatoes or spinach for extra flavor and nutrients.
