Preparation Steps
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Cut the puff pastry sheets into 5-inch squares and refrigerate.
- Melt butter in a saucepan over medium heat. Add flour and salt, cook for 1 minute.
- Gradually add milk while whisking, then simmer until thickened.
- Add spinach and cook for 1 minute until wilted.
- Stir in ham and 1 cup of Swiss cheese. Remove from heat.
- Arrange pastry squares on the prepared baking sheet.
- Place a spoonful of ham and cheese mixture on each pastry square, sprinkle with remaining cheese.
- Fold the corners up and brush with egg white.
- Bake for 18-20 minutes until golden and puffed.
