  1. Preheat the grill to medium-high heat.
  2. Slice the potatoes into 1/4-inch thick rounds using a crinkle cutter or straight cut.
  3. Toss the potato slices with olive oil, then season with salt and pepper to taste.
  4. Arrange the slices directly on the grill, reduce heat to medium, and close the lid.
  5. Cook for about 6 to 10 minutes on one side until golden, then turn and cook until tender and slightly crisp, about 6 to 10 minutes.
  6. Remove from grill and serve immediately with your favorite dipping sauce.
