  • 16 oz rotini pasta (uncooked)
  • 1 cup feta cheese (crumbled)
  • 1 cup cucumber (chopped)
  • 1 cup cherry tomatoes (halved)
  • 0.5 red onion sliced red onion
  • 0.5 cup kalamata olives (pitted)
  • 2 green onions chopped green onions
  • 0.5 cup extra virgin olive oil
  • 4 cloves garlic (minced)
  • 0.25 cup apple cider vinegar
  • 2 tsp lemon juice
  • 1 tsp dried oregano
  • 0.5 tsp pepper

Method
 

Preparation Steps
  1. Cook pasta according to package directions. Drain and rinse under cold water.
  2. In a large bowl, combine cooked pasta, feta cheese, cucumber, red onion, cherry tomatoes, olives, and green onions.
  3. In a small bowl, whisk together olive oil, garlic, vinegar, lemon juice, oregano, and pepper. Pour over the salad and toss gently.

Notes

For best results, refrigerate for at least 30 minutes before serving to allow flavors to meld.
