  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.25 teaspoon kosher salt
  • 0.75 cup unsalted butter
  • 1 cup brown sugar
  • 1 large egg room temperature
  • 0.25 cup molasses
  • 4 tablespoons granulated sugar for rolling
Filling
  • 0.5 cup butter softened
  • 0.25 teaspoon almond extract
  • 0.25 teaspoon kosher salt
  • 2 cups confectioners' sugar
  • 1 jar marshmallow creme or fluff

Method
 

Preparation Steps
  1. Preheat the oven to 350°F and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, ginger, baking soda, cinnamon, cloves, and salt.
  3. In the bowl of a stand mixer, beat softened butter and brown sugar until fluffy.
  4. Beat in the egg and molasses, scraping down sides as needed.
  5. Gradually add dry ingredients to the wet mixture and mix until combined.
  6. Shape dough into 1-inch balls, roll in granulated sugar, and place on prepared baking sheets.
  7. Flatten cookies slightly and bake for 8-10 minutes. Let cool.
  8. Make filling by creaming butter, adding salt, then sugar and marshmallow creme.
  9. Spread filling on the bottoms of half the cookies and top with remaining cookies to make sandwiches.
