  • 2 pounds lean ground beef
  • 1 medium onion, diced
  • 1 teaspoon kosher salt
  • 0.5 teaspoon fresh black pepper
  • 0.5 teaspoon cumin
  • 0.5 teaspoon ground coriander
  • 1 teaspoon chili powder
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon smoked paprika
  • 1 can black beans 15 ounces, drained and rinsed
  • 1 can corn 15 ounces, drained
  • 1 can red enchilada sauce 10 ounces
  • 1 can tomato sauce 15 ounces
  • 1 bag Fritos 10 oz
  • 2 cups shredded Mexican Cheese
  • optional sour cream and guacamole for garnish

Method
 

Preparation Steps
  1. Preheat oven to 400°F.
  2. In a large skillet brown the ground beef and onion together over medium-high heat until cooked through. Drain excess grease. Lower heat to medium-low and season with salt, pepper, cumin, coriander, chili powder, garlic powder, and paprika. Stir to coat. Add beans, corn, enchilada sauce, and tomato sauce. Cook until heated through.
  3. Spread 2/3 of the Fritos onto the bottom of a 9x13 baking dish. Layer the meat mixture over Fritos, then sprinkle with shredded cheese. Bake for 20 minutes or until cheese melts and bubbly.
  4. Garnish with remaining Fritos and serve warm.
  5. Top with sour cream and guacamole if desired.
