  • 4 cups cooked white rice
  • 2 tablespoons vegetable oil
  • 2 eggs eggs
  • 0.5 cup chopped green onions
  • 3 tablespoons soy sauce
  • 1 cup shredded cooked chicken
  • 1 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps
  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add beaten eggs and scramble until cooked through. Remove eggs and set aside.
  2. Add remaining 1 tablespoon of oil to the same skillet. Sauté chopped green onions for 1 minute.
  3. Add cooked rice to the skillet. Stir well and cook for 3-4 minutes.
  4. Stir in cooked chicken, soy sauce, salt, and pepper. Cook for another 2 minutes, mixing thoroughly.
  5. Return scrambled eggs to the skillet. Mix all ingredients well and cook for another minute.
  6. Serve hot, garnished with additional green onions if desired.
