Preparation Steps
- Cook the pasta according to the package instructions, adding salt to the water. Drain and rinse until cool. Peel the eggs and separate the yolks from the whites.
- Chop the egg whites and set aside. Crush the yolks into a fine powder or press through a fine metal strainer into a large bowl. Add mayonnaise, mustard, vinegar, garlic, salt, paprika, and cayenne. Whisk to combine.
- Add the drained pasta to the dressing and stir to coat. Mix in the red onion, green onions, egg whites, and bacon if using. Garnish with additional green onions and paprika. Serve immediately or refrigerate.
Notes
This pasta salad is best served chilled. Feel free to add more seasonings to suit your taste.
