Preparation Steps
- Preheat the oven to 400°F. Spread bacon strips on a rimmed baking sheet and bake for 16-18 minutes until crispy. Remove and set aside to drain.
- Remove most of the bacon grease from the sheet pan, leaving about 2-3 tablespoons. Toss the chopped potatoes in the bacon grease, season with salt and pepper, and spread in a single layer. Bake for 20 minutes, then stir and bake another 20 minutes. Stir once more and bake an additional 15 minutes until golden.
- Chop cooked bacon into small pieces. Remove potatoes from oven, sprinkle with shredded cheese and bacon. Return to oven for 2-3 minutes until cheese melts. Garnish with sliced green onions and serve hot.
