Preparation Steps
- Preheat oven to 400°F. Spread bacon slices on a baking sheet and bake for 16-18 minutes until crispy. Remove and drain on paper towels.
- While bacon bakes, peel and chop potatoes. Toss potatoes with 2-3 tablespoons of bacon grease, salt, and pepper. Spread on a baking sheet and roast for 20 minutes, stir, then roast another 20 minutes, stirring occasionally, then bake for an additional 15 minutes.
- Chop cooked bacon into small pieces. Remove potatoes from oven, sprinkle with shredded cheese and chopped bacon. Return to oven for 2-3 minutes until cheese melts. Garnish with sliced green onions before serving.

This dish is best served hot, with additional toppings as desired.
