  • 1 cup unsalted butter
  • 1.5 cups light brown sugar
  • 2 units large eggs
  • 1 tablespoon vanilla extract
  • 0.5 cup cocoa powder
  • 0.5 teaspoon kosher salt
  • 1 teaspoon baking soda
  • 2.67 cups all purpose flour
  • 1 cup white chocolate chips
  • 12 units Oreo cookies coarsely chopped

Method
 

Preparation Steps
  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. In a stand mixer with paddle attachment, beat butter and brown sugar for 2 minutes until light and fluffy.
  3. Add eggs and vanilla; mix until smooth, scraping sides as needed.
  4. In a separate bowl, whisk cocoa powder, baking soda, and salt. Gradually mix into wet ingredients.
  5. Add flour gradually, mixing until just incorporated.
  6. Stir in white chocolate chips and chopped Oreos.
  7. Using a cookie scoop, portion dough onto baking sheets 2 inches apart. Bake for 8-9 minutes.
  8. Cool cookies on baking sheet for 3-4 minutes before transferring to a wire rack to cool completely.
