  • 1.5 pounds skinless chicken breast
  • 0.5 cup reduced-sodium chicken broth
  • 2 tablespoons reduced-sodium soy sauce
  • 2 teaspoons cornstarch
  • 2 tablespoons water
  • 1 tablepoon canola oil
  • 1 bunch asparagus
  • 6 cloves garlic
  • 1 tablespoon fresh ginger
  • 3 tablespoons fresh lemon juice
  • fresh black pepper to taste

Method
 

Preparation Steps
  1. Season the chicken with salt and set aside.
  2. In a small bowl, mix chicken broth and soy sauce.
  3. In another small bowl, combine cornstarch and water until smooth.
  4. Heat 1 teaspoon of oil in a wok or large skillet over medium-high heat. Add asparagus and cook until tender-crisp, about 3-4 minutes.
  5. Add garlic and ginger; cook for about 1 minute until fragrant.
  6. Increase heat to high. Add half of the chicken and cook until browned, about 4 minutes per side.
  7. Remove cooked chicken and set aside. Repeat with remaining oil and chicken.
  8. Pour soy sauce mixture into the pan; bring to a boil and cook for 1-1/2 minutes.
  9. Add lemon juice and cornstarch mixture; stir well. Return chicken and asparagus to the pan, cook for additional 2 minutes, then serve.
