Preparation Steps
- Preheat oven to 350F. Spray a 9×5-inch loaf pan with non-stick spray and lightly flour, set aside.
- In a large bowl, whisk together the egg, sugars, oil, sour cream, vanilla, cinnamon, and nutmeg until well combined.
- Add the flour, baking powder, baking soda, and mix gently until just combined.
- Fold in the grated carrots and apples gently.
- Pour the batter into the prepared loaf pan, smoothing the top.
- Bake for approximately 50 minutes, until the top is golden and a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 15 minutes before transferring to a wire rack to cool completely.

Best enjoyed fresh, but can be stored in an airtight container for up to 2 days.
