  • 2 cups old-fashioned oats
  • 1.5 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon kosher salt
  • 0.5 cup unsalted butter room temperature
  • 1 cup light brown sugar packed
  • 2 large eggs room temperature
  • 1 tablespoon molasses
  • 1 teaspoon vanilla extract
  • 1 cup caramel bits
  • 1.82 ounces semi-sweet chocolate chips
  • caramel sauce for garnish

Method
 

Preparation Steps
  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together oats, flour, baking powder, baking soda, and salt.
  3. In the bowl of a stand mixer with paddle attachment, add butter and brown sugar. Beat on low until smooth.
  4. Add eggs, molasses, and vanilla. Mix until fully incorporated, scraping sides as needed.
  5. Slowly add dry ingredients to wet mixture until combined.
  6. Stir in caramel bits and chocolate chips until just combined.
  7. Drop 2-tablespoon scoops of dough onto prepared baking sheet. Gently flatten slightly.
  8. Bake for 7 minutes. Cookies may appear doughy, which is okay.
  9. Let cookies rest on baking sheet for a few minutes, then transfer to wire rack to cool.
  10. Before serving, drizzle with caramel sauce.
