- In a large bowl, lightly beat the eggs. Add grated butternut squash, flour, garlic powder, onion powder, salt, and shredded cheese. Mix until well combined.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Spoon about 1/4 cup of the mixture onto the skillet for each fritter. Flatten slightly with the back of a spatula.
- Cook about 3 minutes per side until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
