  • 1 lb Simply Nature Organic Thin Sliced Chicken Breast Fillets
  • 0.25 cup Burman's Hot Sauce
  • 2 tablespoons Specially Selected Raw Honey
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon onion powder
  • 1 cup Simply Nature Organic White Rice
  • 1 package Season’s Choice Riced Cauliflower
  • 2 tablespoons Simply Nature Organic Extra Virgin Olive Oil
  • to taste salt
  • 1 cucumbers, sliced
  • 1 cherry tomatoes, halved
  • 1 Park Street Deli Dill Dip or avocado cilantro dressing

Method
 

Preparation Steps
  1. Place chicken, buffalo sauce, honey, garlic powder, paprika, salt, onion powder, and black pepper in a bowl or bag. Marinate for 30 minutes to 2 hours in the fridge.
  2. Cook rice according to package directions.
  3. Place cauliflower rice on a sheet pan. Drizzle with olive oil, sprinkle with salt, and roast at 425°F for 20-30 minutes until browned. Mix with cooked rice.
  4. Heat a grill pan over high heat. Add marinated chicken, discarding excess marinade. Cook for a few minutes on each side until browned and cooked through. Rest the chicken for a few minutes.
  5. Slice chicken and serve over cauliflower rice. Top with sliced cucumber, cherry tomatoes, and a dollop of dill dip.
