  • 1 pie 9 inch pie crust
  • 3 large eggs
  • 1 cup corn syrup light or dark
  • 0.5 cup brown sugar packed
  • 0.25 cup melted unsalted butter
  • 0.25 cup bourbon
  • 0.25 teaspoon salt
  • 1 tablespoon cornstarch
  • 1.75 cups pecan halves

Method
 

Preparation Steps
  1. Preheat oven to 425°F. Place pie crust in pie pan and chill until filling is ready.
  2. In a medium bowl, whisk together eggs, corn syrup, brown sugar, melted butter, bourbon, salt, and cornstarch until well combined. Stir in pecans.
  3. Pour filling into the prepared pie crust.
  4. Place pie on a baking sheet and cover with a pie shield or strips of foil.
  5. Bake at 425°F for 10 minutes, then lower the oven temperature to 350°F and bake for an additional 40 minutes or until the filling is set and slightly puffed.
  6. Remove from oven and cool completely before slicing.

Notes

Serve with whipped cream or a scoop of vanilla ice cream for added richness.
