Ingredients

Main Ingredients
  • 2 cups unbleached flour
  • 0.25 cup sugar
  • 0.25 tsp salt
  • 0.5 tsp baking soda
  • 1 tbsp baking powder
  • 0.25 cup frozen butter half stick
  • 0.75 cup buttermilk
  • 1 large egg
  • 1 tsp vanilla
  • 1 cup blueberries fresh or thawed frozen

Method

Preparation Steps
  1. Preheat the oven to 400F.
  2. In a large bowl, whisk together the dry ingredients: flour, sugar, salt, baking soda, and baking powder.
  3. Using a grater, grate the frozen butter into the flour mixture. Mix well with a fork or pastry cutter until crumbly.
  4. In a separate bowl, whisk together the buttermilk, egg, and vanilla.
  5. Pour the wet ingredients into the dry ingredients gradually, stirring gently until just combined. Do not overmix.
  6. Fold in the blueberries gently. Do not stir too vigorously to avoid breaking the berries.
  7. Line a baking sheet with parchment paper. Drop large spoonfuls of the dough onto the sheet, forming rounds.
  8. Bake for 18 minutes or until golden brown. Let cool slightly before serving.

Notes

Best enjoyed warm with butter or jam.
