  • 4 tablespoons butter room temperature
  • 8 oz cream cheese
  • 0.5 cups plain Greek yogurt 5%
  • 0.25 cups honey
  • 1 large egg white
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • 1 cup blueberries

Preparation Steps
  1. Preheat the oven to 350ºF and spray an 8x8-inch pan with non-stick cooking spray.
  2. Place graham crackers and butter into a food processor and process until the mixture turns into a crumble (about 3-4 minutes).
  3. Press the graham cracker crumble into the bottom of the pan until evenly spread out.
  4. Bake the crust for 7 minutes at 350ºF and remove from the oven.
  5. Blend cream cheese, Greek yogurt, and honey in a food processor until smooth.
  6. Add egg white, vanilla extract, and lemon juice to the mixture and blend until smooth.
  7. Add blueberries to the food processor and blend until pureed and mixture turns blue.
  8. Pour the blueberry mixture over the crust and spread evenly.
  9. Bake the bars for 25-30 minutes at 350ºF.
  10. Let cool for 30 minutes, then refrigerate for at least 2 hours before slicing and serving.
