Preparation Steps
- In a large mixing bowl, beat the egg, mashed bananas, sugars, butter, and vanilla until well combined.
- Add the oats, flour, cinnamon, baking soda, and salt to the wet ingredients. Mix until just combined.
- Fold in the chocolate chips evenly into the batter.
- Use a cookie scoop or spoon to form 14 mounds of dough on a baking sheet lined with parchment paper.
- Refrigerate the formed dough for at least 2 hours to prevent spreading during baking.
- Preheat the oven to 350°F. Bake the cookies for approximately 13 minutes or until the edges are golden.
- Let the cookies cool on the baking sheet for about 10 minutes before transferring to a wire rack.
Notes
For softer cookies, bake for a shorter time. For crunchier edges, bake a little longer.
