  • 1 teaspoon baking soda
  • 0.5 teaspoon nutmeg
  • 1 cup mashed ripe bananas
  • 1 cup pineapple diced, frozen

Preparation Steps
  1. Preheat oven to 350F. Spray two 8x4 inch loaf pans with floured cooking spray; set aside.
  2. In a large bowl, whisk together eggs, melted coconut oil, buttermilk, sugars, and vanilla.
  3. Add flour, baking powder, baking soda, nutmeg, and salt; stir just until combined.
  4. Fold in mashed bananas and diced pineapple until evenly incorporated.
  5. Pour batter into prepared pans. Bake for about 45 minutes, until top is golden and a toothpick inserted in the center comes out clean.
  6. Cool in pans for 15 minutes, then transfer to wire racks to cool completely.

Notes

Use ripe bananas for best flavor. Diced pineapple adds moisture and sweetness.
