  • 12 oz uncooked ziti
  • 28 oz crushed tomatoes
  • 1 tsp olive oil
  • 3 cloves garlic minced
  • 10 oz frozen spinach thawed
  • 1 tsp oregano
  • 2 tbsp chopped fresh basil
  • salt and pepper to taste
  • 8 oz fat-free ricotta
  • 0.25 cup grated Parmesan cheese
  • 2 cups shredded part skim mozzarella
  • olive oil cooking spray

Method
 

Preparation Steps
  1. Preheat oven to 375°F. Spray a 9x13-inch baking pan with oil spray.
  2. In a large pot of salted water, cook pasta according to instructions until al dente. Drain and set aside.
  3. In a medium saucepan, heat olive oil and sauté garlic. Add spinach, salt, pepper, and crushed tomatoes. Cook for 5 minutes and season with basil and oregano.
  4. Combine sauce with cooked pasta. Mix in half of the mozzarella, Parmesan, and ricotta cheese.
  5. Transfer pasta mixture to the prepared baking pan. Top with remaining mozzarella.
  6. Cover with foil and bake for 30 minutes until cheese is melted and edges are golden. Let cool for 5 minutes before serving.
