  • 2 pounds wild salmon fillet with skin
  • 0.25 cup light mayonnaise
  • 0.25 cup grated Parmesan cheese
  • 3 cloves garlic (finely minced)
  • 2 tablespoons chopped dill
  • 2 tablespoons chopped parsley
  • 2 tablespoons chopped basil
  • 2 tablespoons chopped chives

Method
 

Preparation Steps
  1. Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper or aluminum foil.
  2. Combine mayonnaise, Parmesan, garlic, and herbs in a small bowl.
  3. Place salmon, skin side down, onto the lined baking sheet. Cover with another piece of parchment or foil and bake for 8 minutes.
  4. Remove from oven and discard top parchment or foil. Spread the herb mixture on top of the salmon.
  5. Return to oven uncovered and bake until the top is browned and the salmon flakes easily with a fork, about 12-15 minutes.
  6. Check the internal temperature; it should register 135°F when checked with a thermometer.

Notes

Serve hot with lemon wedges and your choice of sides.
