  • 15 ounces canned garbanzo beans
  • 1 small yellow onion chopped
  • 3 cloves garlic
  • 1 small jalapeno ribs and seeds removed, roughly chopped
  • 2 cups cilantro leaves packed
  • 2 tablespoons tahini
  • 1 teaspoon ground cumin
  • 0.25 teaspoon cayenne pepper or to taste
  • 0.25 cup panko crumbs
  • 0.25 cup warm water
  • 3 tablespoons fresh lemon juice
  • to taste salt and black pepper

Method
 

Preparation Steps
  1. Preheat your oven to 450°F. Place a baking sheet inside to heat up.
  2. Combine chickpeas, chopped onion, garlic, jalapeno, cilantro, tahini, cumin, cayenne, salt, and pepper in a food processor. Process until finely chopped and mixture holds together.
  3. Transfer the mixture to a bowl and stir in panko crumbs. Form into 12 balls or patties.
  4. Remove the hot baking sheet from the oven, lightly grease it with cooking spray, and place the falafel patties on it.
  5. Bake for 10 minutes, then flip and bake for another 10 minutes or until golden and crisp.
  6. Meanwhile, mix tahini, warm water, and lemon juice until smooth. Season with salt and pepper.
  7. Remove falafel from oven, transfer to a plate, and serve with pita, cucumber, and tahini sauce.
